Courgette, feta & pea fritters

Makes 16 fritters

2 x courgette

Feta cheese

50g peas

3 chopped spring onions

2 beaten eggs

1 tsp paprika

75g gram flour

Rapeseed oil

Salt and pepper

Fresh parsley

1 lime

 

1.       Lightly boil the peas and allow to cool

2.       Grate the courgettes and squeeze out the excess water

3.       Crumble the feta into a mixing bowl and add the chopped spring onions, paprika, salt, pepper and chopped fresh parsley

4.       Stir in the beaten eggs

5.       Slowly add the sieved gram flour

6.       Add the grated courgettes and peas

7.       Add 2-3 tbs rapeseed oil to a saucepan and put on a high heat

8.       Once the oil is hot, add a tablespoon of the mixture and flatten the top with the back of a spoon. You can fry 4 fritters at one go.

9.       Fry each fritter for 2-3 minutes on either side and flip over

10.   Remove with a spatula and drain on kitchen towel

11.   Serve with fresh parsley and lime wedges

12. Shown served with feta and spring onion polenta, kale and a fried egg.
