Spiced root vegetable burgers

Serves 4 (makes 8)

 

250g scrubbed potatoes

4 thinly sliced spring onions

1 grated carrot

1 grated parsnip

1 large grated beetroot

1 tsp cumin

Chopped fresh parsley

1 tsp turmeric

1 finely chopped red chilli

1 egg

1 tbsp buckwheat flour

Salt and pepper

 

Tahini dressing

1 cup Coconut/Greek yoghurt

Juice and zest of 1 lime

1 tsp tahini paste

 

1.       Parboil the potatoes whole and then leave to cool

2.       Grate the cooled potatoes into a big mixing bowl

3.       Add in all the other ingredients, season to taste and mix well

4.       Make the mixture into 8 patties (3 inches in diameter)

5.       Add some rapeseed oil to a frying pan and fry the patties on both sides until golden brown.

6.       Mix the yoghurt with the lime zest and juice and tahini paste to serve with the burgers

7.       Serve with salad or in a bun!
