Spicy black rice peppers & guac

 

Serves 4

4 x bell peppers

100g feta cheese

2 x grated carrots

2 x grated courgettes

1 x red onion

2 x cup of black rice

1 x tsp cumin powder

1x tsp paprika

½ x tsp cinnamon

1x fresh red chilli (finely chopped)

Handful of fresh coriander

1 clove of garlic (finely chopped)

Zest and juice of a lime

Salt and pepper

Rapeseed oil

 

For the Guacamole

2 avocados

½  lime

½ red onion

1 vine tomato

Salt and pepper

½ fresh red chilli

Fresh coriander

 

1.       Pre heat the oven to 200oC

2.       Cook the black rice by boiling in plenty of water for 40 minutes

3.       In a frying pan, fry the onions then add the carrot and courgettes

4.       Add the chopped chilli, chopped garlic, cumin, paprika, cinnamon, salt and pepper

5.       Fry for 10 minutes

6.       Add the cooked rice, lime juice and chopped coriander to the onion, carrot and courgette mix

7.       Chop the top of the pepper and remove the seeds, keeping the top!

8.       Season the inside of the pepper and fill with theblack rice mix, crumble feta cheese on top (optional) place the top back

9.       Place on a baking tray and bake in the oven for 30 minutes (until the pepper is cooked)

10.   Make the guacamole by finely dicing the tomato and red onion

11.   Add the avocados to the tomato and onion and mash together with a fork alongside the lime juice, chopped coriander, salt and pepper

You may have some black rice mix left so this can be served on the side with the guacamole.
