SriLankan Dahl

 

Serves 4

250g orange lentils

20 curry leaves

2 cloves of garlic

1 small onion, diced

½ inch cinnamon

1 fresh red chilli

½ tsp garam masala

¼ tsp turmeric

½ teaspoon salt

2 cups of coconut milk

1 tin of chopped tomatoes

1 cup coconut cream

 

1.     Boil lentils in water for 20 minutes

2.     Drain lentils and rinse in cold water

3.     Add lentils to a big pan and add all other ingredients

4.     Cook until the lentils are soft

5. Serve with boiled rice and a cucumber and mint raita
